CAKE WITH SUGAR PEARLS

For a pie dish of 26 cm in diameter
Make a dough from
- 500 g flour
- 1 table spoon sugar
- 1 tea spoon of salt
- 75 g softened butter
- 1 egg,
- 2 dl milk
- 2 tea spoons of dried yeast (or half a cube of fresh yeast) diluted in ½ dl lukewarm milk
Put the dough in the pie dish, cover it with a moist towel and let it rise for at least 2 hours
Spread the dough with small grains of decorating sugar, or with little pieces of sugar. Press them into the dough with a little stick. Ensure to make holes underneath the little pieces of sugar. In any case do not close up the holes. The more, the better…
Carefully pour 1 dl cream on the pie so it can enter into the holes
Baste with an egg yolk mixed with a dash of cream
Put in the oven at 200 degrees for 35 minutes
Serve lukewarm with a glass of Grains Nobles.
