SPÄTZLI WITH HAM AND CHEESE

  • Mix
    • 300 g flour,
    • 2 eggs,
    • 2.5 dl milk,
    • 1 tea spoon salt

    until you get a smooth dough falling off the spatula in pieces. Add milk if necessary.

    Put it covered in the refrigerator for at least half an hour.

    Boil up salted water in a large pot

    Pass the spätzli dough through a spätzli sieve or a sieve with big holes letting them fall into boiling water

    Skim the spätzli once they have risen back to the surface

    Heat up some finely chopped onions in a little oil, set aside. Reheat the spätzli at high heat in the same pan. Once they are fried, add the onions and some diced cooked ham, add pepper. Mix well

    Spread grated cheese over them (choose an easily melting cheese such as raclette cheese) and cover

    You can also prepare the spätzli the evening before and store them in the refrigerator and then fry them at the last moment

    Serve with lamb’s lettuce with walnut oil.

    And, of course a glass of Dôle!
