GREEN PEA SOUP
-
In winter, there is nothing better than a good, warm soup.
As a starter for 4 persons
Ingredients
- Cut 1 or 2 shallots and a big garlic clove into large pieces and heat these in a wok with a little oil
- Add 250 g green peas (fresh or frozen), sauté them slightly, too
- Add about 1 dl water, one tea spoon vegetable bouillon, pepper and a small amount of chilli powder
- Leave to simmer with the lid on until the peas are tender, add water if necessary. Add around ten coriander leaves
- Mix
- Add a big spoonful of crème fraîche, and water if necessary
Reheat in the same wok and adjust the seasoning to taste
Decorate with some cress and serve with slices of raw ham
Slices of raw ham
Put some slices of raw ham underneath the grill in your oven. Grill them for 3-4 minutes until they are crunchy. Take care and watch because they burn quickly!
This green pea soup goes along nicely with the Heida La Leyraz whose freshness harmonises wonderfully with the smoothness of the soup.
